September is when Mexican Independence Day takes place, and at Villa La Estancia Beach Resort & Spa Riviera Nayarit, we celebrate with a yearly event that has become a favorite for us and our guests: the Chile en Nogada Fest at La Casona.

One of Mexico's favorite dishes and a symbol of pride. It was created in 1821 in Puebla by nuns from the Santa Mónica Convent who wanted to celebrate Mexico's Independence, through food, but with the creative twist of only using seasonal ingredients that had the same color as Mexico's Flag!
A Chile en Nogada is a poblano chile, which you stuff with meat, fruits, and spices, and top with a velvety walnut sauce (Nogada), fresh pomegranate seeds, and parsley.
